ONE Mac n Cheese

A Korean-style Mac n Cheese that has ONE of everything. A little bit of spicy, sweet, and savory-ness from all sides. There is only one thing this recipe requires from you, a Late-Night Craving.

Summary

If you cook food, then you must forget measurements once in a while. This ‘Korean-inspired’ macaroni and cheese recipe steers away from the traditional cheese sauce and relies completely on ONE saucepan. It will be done in less than 15 minutes. The flavours I have added in the first three steps can absolutely be substituted for any other sauces, meat or vegetables, spices, and herbs. But make sure, they don’t take too long to cook, otherwise you lose the philosophy of making this dish.

Ingredients

  • ONE tsp of butter.
  • ONE tsp of chopped/sliced garlic.
  • ONE by two (1/2) tsp of Gochujang paste.
  • ONE pinch of salt
  • ONE ramekin (or any cup) of milk.
  • ONE ramekin (or any cup) of water.
  • ONE pinch of any herbs or spices.
  • ONE by two (1/2) ramekin (or any cup) of Macaroni.
  • ONE slice of any processed cheese.
  • (Optional) ONE generous grating of Parmesan cheese.
  • ONE pinch of toasted black sesame seeds.

Procedure

  1. Melt butter in a saucepan and add the chopped/sliced garlic and saute until lightly browned.
  2. Add the Gochujang paste, and saute till aromatic. (Optional: add little bit of water to the paste to loosen it, and add to the pan for easy mixing. In this case, fry until the water evaporates.)
  3. Now add the milk and water. Mix well to make sure the Gochujang is mixed well, and no bits are sticking to the pan. Add the salt (just a pinch) and herbs/spices and mix well once again.
  4. Bring it to a boil. Once it’s on a rolling boil, add the macaroni and cook without covering with a lid. This is to make sure the liquid reduces as it boils, to a sauce consistency.
  5. After 7-8 minutes of cooking, the macaroni is cooked completely. Turn off the stove, and add the one slice of processed cheese. (American cheese is the best choice, but who’s judging?) But, don’t mix it!
  6. Put the lid on top to trap the residual heat and let the cheese melt for at least 1-2 mins.
  7. After 1-2 mins, open the lid and stir until evenly incorporated. Grate a generous grating of Parmesan cheese.
  8. Serve in a bowl, and add toasted black sesame seeds on top. (Optional: Thin slices of dried red chilis can be added if your into that sort of thing)
