So, the reason for uploading a partially tested recipe is that I sometimes see something and want to try it. But, I never fully try to make it perfect unless it’s for a video or something. Often, I feel that’s what makes cooking enjoyable at times. Just taking away the desire and pressure to be perfect. Ironically, this is not a recipe I found from a single source online. (If you’re here from the vlog I uploaded) I saw a variation of this recipe first on the YouTube channel “Sortedfood“. (one of my faves. Highly recommend it) But, they haven’t disclosed the specifics of the recipe. I figured I’d find it online but no sir! (or madam!), could not find the same 1:2:3 recipe. So, I kinda winged it. Here’s the recipe, hope you can make it better!
Ingredients
For the Golden Syrup:
- 100 g of Sugar (Brown or White)
- 75 g of Water
- 1 tbsp of Lemon Juice
- 50 gms of Softened Butter
- 100 gms of Sugar (50g sugar + 50g Golden syrup)
- 150 gms of Flour
- 2 tbsp of Ginger Powder
- (Optional) 1/4 tsp Baking powder
Procedure:
Making the Golden Syrup:
- In a saucepan, add the sugar, water, and lemon juice. Bring it to a boil.
- Cook until it caramelizes, changes colour, and becomes thicker in consistency.
Making the Biscuits:
- In a bowl, mix softened butter, sugar, and golden syrup. Mix until smooth in texture.
- Sieve the flour and the ginger powder. Mix until combined and it forms a dry dough. Optional: add some baking powder to make them rise slightly in the oven.
- Add a tsp of water to bring the dough together. Roll it out on the work surface between two sheets of baking/parchment paper until 2cm thick (roll it less or more based on your preference). Freeze the dough for 10 mins to hold it’s shape.
- Cut out circles using a cookie cutter or a lid/glass with a thin, sharp edge. Repeat until the dough is finished.
- In a baking tray lined with baking/parchment paper, place the biscuits and bake in the oven at 180 C for 10-15 mins until brown and cooked.
